Idli as we all know is a very popular South Indian recipe. Idli is truly good for the health as it has probiotic bacteria that is good for our intestines. Here we have made use of foxtail millet and black gram Dal alongwith poha for the preparation of the idli batter.

Ingredients

Serves : 5
  • Idli rice 2 cups soak it in water for 5 hours


  • Black gram with the outer black layer split or whole 3/4 cup soak it in water for 5 hours


  • Foxtail millet known by the name thinai in Tamil 1/2 cup soak it in water for 5 hours.


  • Flattened Poha 1/2 cup soak it in water for 15 minutes.


  • Fenugreek seeds or vendayam or methi seeds 2 teaspoons


  • 6 Sea salt 4 teaspoons.

Directions

  • Now soak idli rice, black gram dal, foxtail millet, fenugreek seeds in water for 5 hours.
  • Now grind them to a coarse paste add the poha at the end.
  • Now leave it for fermentation for 8 hours remember to add salt at the end.
  • Now after fermentation pour the batter into idli mould or plates and steam them as we do for the ordinary idli preparation.
  • Serve hot foxtail millet black gram dal and poha idli along with coconut chutney or onion chutney or tomato-onion chutney.
